Help me pick a class to roll

alright..so i have a Mage at lvl 63 then i grew bored of always casting frostbolt while leveling so i rolled a DK to try out a melee class..i didnt think it would last long as i like Ranged DPS over Melee DPS for the extra survivability in case %^&* hits the fan and i need to run...however i am growing bored of it as ive hit 80 and ive gotten most of my tier 9 gear...an so on, so i decided to roll a new class and lvl it quicker(hopefully) with BoA gear...however i need to decide which one
Continue Mage - I plan on finishing this character as i love magic classes in every game i've played but i had help from a friend(Hunter w/ Tank pet) but he stopped after we hit the recruit a friend lvl 60 barrier and i found the 3 lvls to b VERY SLOW so i was going to get another character to 80 and get BoA gear to make it go quicker, is a frost mage viable to solo outlands and northrend?
Hunter - I'm probably going to wait until cataclysm comes out because i know they are changing them so i dont want to learn everything about them then have to re-learn everything plus they get free ammo then :D
Priest - my DK is a tank or dps which i like since if i get bored of one i can do the other, and ive heard the priest is a DPS or Healer...ive never played a healer before but i like the added responsibility of a tank so a healer would be even better right?
Rogue - I'm not a huge fan of PvP on my other characters because i usually get rolled because i dont know much about each of my spells yet, plus i havent PvP'd much....however i was thinking this could b my PvP chr since they pretty much stun things til their dead
and thats my choices..thanks for helping me/trolling/flaming :D

Your best bet is to simply try each class to around 20 (or better yet the mid 40ies deadzone) and simply see what you enjoy from actually playing the class rather then second hand advice from anyone else.
Anyway imo you're probably bet off continuing the mage and just picking a new spec and playing that for a while. It's obvious you enjoyed them to some extent in order to get to 60 (even with RaF). It just sounds like you burnt yourself out by sticking religiously to 1 spec and playstyle. Both arcane and fire are viable for levelling at 60+ and should feel different enough to renew your interest in the class.
You mentioned you want to try healing so another option is to get some heirlooms and roll a healing class and try levelling via the dungeon finder tool. You have 4 options here: Druid, Paladin, Shaman and priest.
Since you have already tanked before Druid and Paladin are appealing since they can fill in for damage, healing or tanking (druids in addition can choose between ranged or melee damage). Shaman can heal or do melee/caster damage and Priests can heal or do caster damage mainly involving damage over time.
End of the day however we can only tell you so much however; we don't know what you enjoy personally from a class. The best we can do is give abridged class descriptions that you can read on the character creation screen anyway your best bet is to simply play the classes and then see what one you end up coming back to most often.

Easy decision - roll a shaman
- easy/fun to level as enhance (melee) or elemental (ranged)
- awesome healing spec (resto)
- always in demand due to bloodlust/heroism
I'd second this also. If you don't have an interest in Tanking, then the three Shaman trees give you the best of Ranged, Melee and Healing.
Personally I prefer Elemental with Resto Offspec. But Enhancement is great fun if your a fan of Melee.
I would also agree with the other comment made. Level all classes to at least lvl20 before settling on one fully.
