If you're short on cash, pairing enchanting with mining seems the obvious choice. Pairing enchanting with a proff that requires you to shill out for matts is likely to put a big hole in your pocket.

The main advantage of pairing with tailoring, to my mind, is that you can make stuff easily that will DE into the mats you need to level. You choose the right thing to tailor, and get the stuff you need.
Also, the stuff you need (mostly cloth) can generally be farmed by other, higher level characters.
And finally, you don't make a lot of stuff you mayt have trouble getting rid of in the AH.
A slide, well... I'd say tailoring + enchanting is about 8, 9 if you intend to get to 80 and use tailoring there or are a clothie, 10 if you do both of those.
Enchanting + JC/BS/Eng/LW/Insc/Alch = Nice once you get there, but painfully expensive to level, even if ou already have a strong 80. If you do this, make sure you pick a crafting proff you will get a lot use of at 80.
You seem to need the extra income from a gathering profession. If you're doing a DK or Pally, take mining. Druid get herbalism. Any other class, Mining is likely most lucrative, but herbalism is not far behind.
Here's a thought, though: Start leveling the gathering profession and Enchanting. See how it feels. If it sucks, you have taken some money home with gathering, so it wasn't a waste when you change it to tailoring. Just keep your cloth around until you've decided.

LW'ing, BS'ing, JC'ing (until you lvl with cuts), engineering (partly) all produce items who can be DE'ed while levelling that profession.
And they all require either significant amounts of gold to acquire materials, or access to the companion gathering profession.
Another option is to take a gathering profession, use a leveling guide to gather enough materials to level a crafting profession, and then drop the gathering profession, but that's time consuming.
I would probably take tailoring for the bags, and the mounts, unless you have another character with a gathering profession to supply a different crafting profession.

I'm not being cagey, I just never did both (my enchanter is a tailor). So I can't really compare them except in theory.

I leveled enchanting and tailoring together, but TBH I can only remember a few times that I tailored more than a single item for the sole purpose of DE'ing. Between quest rewards, mob drops and piking stuff up cheap on the AH you should be able to level Enchanting just fine without tailoring.
Personally, I'd pair it with a gathering profession. Gold is gold after all

Never ever select enchanting (or any other crafting proffession for that matter) as a profession to lvl as you lvl your character. Pick two gathering professions and breeze through lvl 80, then powerlevel whatever profession you fancy.
I wasted a lot of play time (50%) looking for customers for sh***y enchants and combing the AH for bargains, grinding rep for twink enchants etc only to discover lvl 80s are so rich they can afford to buy mats and waste their way to 450. Just because i didnt want to vendor my soul bound items.:(
Dont think cloth is free, instead of crafting it to greens to dust sell it on AH! And the tailor/enchanting combinations doesnt work on all lelvels either, at least on my server frostweave could never be bought and crafted / enchanted with a profit (to much cloth pr bolt) but leather could (few leathers pr glove/boot).
So please forget tailoring and enchanting and stikk with skinning/herbalism/mining. I recommend skinning since it is a no-brainer.
Sorry, but I cannot agree with this.
It can be very helpful to have enchanting and tailoring on a character while leveling. You certainly can make gold with it, and being able to craft bags and enchant gear are also useful.
If you can manage to get a few gold from selling recipes or other useful items, spend a little gold buying low priced low end green items. DE and sell the dusts. An auction+profession mod that shows the average DE value of items after a few regular scans of the AH helps with this. Find items that are worth more to DE, buy them, sell the dust. Once you level up high enough to do a few twink enchants, selling the scrolls can often be very profitable.
Just because you do not care for leveling a profession while leveling your characters, it doesn't mean that option is not valid, and nobody can have fun or manage to make gold leveling that way.

Agree with Kitty. Would also point out that, while making for 80 with all haste and then leveling proffs may be faster or more efficient, some people find leveling incredibly tedious. Having something else to do that makes it feel like you're getting somehwere can be a great boon.
