Frost mages are one of the most cerebral classes in all of WoW to play. Understanding your opponents' abilities and likely counters to your control and knowing how to best apply dmg to them by repeatedly freezing them to burst them at the appropriate times while also properly timing your CD usage to maximize your cc/kiting/dmg...this is a complex process of managing your short and medium CD's to produce an effective dmg rotation based upon the freezes.
You must do this while constantly adapting to sometimes unexpected counters (i.e. tactically risky early CD blows and such) by your opponent or his partner(s), and you must also adapt to best manage these complex cycles around your Brain Freeze and Finger of Frost procs that can also potentially increase damage astronomically if you instantly conceptualize a string of the right decisions, or increase your damage an unnoticeable amount (possibly even getting yourself blown up) if you conceptualized a single wrong one.
And of course, you must do all of this on the move with the ability to do it going in any direction. Sometimes you have to chase healers on tight pole he's using for LoS while executing all these complex processes, and also, often, watching another player in your focus to possibly polymorph/counterspell/deepfreeze/spellsteal/etc. And you have to manage mana more carefully than any other class in WoW.
Yeah, dude, it's tough to play.

I'm wondering if you seriously thought of PvP being anything like spamming frostbolt on a dumb AI.

With talents and haste, your Frostbolt should take 2 seconds or less to cast. Mine is currently at 1.9 seconds, and if I could get it shorter I would.
Also, you'll be using more than your fair share of spells, they just won't all do damage, or at least not a lot.

I'll use the majority of those in any given 1v1 situation. Some are swappable obviously, but I could easily find a place for a good 90% of those spells regardless of class. As stated above, your job as a Frost Mage is to create a situation in which to use Frostbolt. Those who you're fighting against will do all in their power to keep you from casting it, and with good reason. With moderate gear, you'll be critting for 6k+.
In fact on a 0 resilience target (I'm assuming here, but it had to be) I've crit for 9.4k with a Frostbolt. They're worth setting up.

Yeah, what you're not understanding, Away, is that neutering your opponent is the difficult part of getting off that frostbolt; you have to setup the frostbolts such that a melee opponent can't counter it (sometimes there's no way of doing this; you'll have to learn to fakecast) AND gain enough distance at the precise moment you've neutered his counters so that he can't close the distance to get off a single hit (because if you're getting hit, you're losing...bottom line). Sometimes you don't even have the luxury of needing only to gain enough distance to frostbolt withour getting hit; you have to ensure he doesn't get close enough to be in range to use a shorter-distance ability to counter that frostbolt.
Our entire class PvP mechanics are built around the concept of successfully freezing and dpsing a frozen target; that's precisely what makes it one of the most (arguably THE most) cerebral class in all of WoW. Just to be able to get off basic damage you have to know pretty much every ability every other class has that could counter/prevent a freeze.
You want easy damage? Play Arcane; it's point and shoot.

Well, part of it right now is that I'm in the 20-29 bracket and don't have a lot of toys, but I guess coming from a Ret paladin which is "do everything in your power to stay on target", doing a complete 180 to
"do everything in your power to get the frack away"
seems counter-intuitive to me. Hopefully by 80 I'll get used to it.
That's not always true. Against hunters, you want to get in their face for the most part. Or better yet stay behind them.

Better yet LoS behind a pillar free casting on his partner and just running around to the other side whenever he comes to chase you.
