Your spec seems fine however you might have been doing what i tend to do sometimes, which is preserve mana above spam healing if needed.

If you're new to healing and having problems with
ONLY the last boss
on Pit of Saron, its most likely because you are healing the boss which is prolonging the fight
and eventually causing you to go OOM
(just read your last comment). I doubt the issue has anything to do with your gear, gems or talents.
The last boss places a debuff on a random player at various times throughout the fight (noticable by the
green
beam of energy) that will cause any healing done to THAT player to ALSO heal the boss. I've seen many times where novice healers unaware of the boss' mechanics bring his health from 5% back up to 70% in a matter of seconds. I'm sure once you get used to being aware of your party's debuffs, you'll be able to heal that instance just fine. Good luck.
Edit: However, if you're having a problem keeping just the tank alive. The boss also places a different debuff on a random player (noticable by the
red
beam of energy) that causes any damage dealt BY THAT player to also damage whoever the boss is targeting, which is almost always the tank. To correct this, any player with the red beam debuff needs to stop dps until the debuff wears off. (Note: JUST that player with the debuff needs to stop attacking, not like Forge of Souls' Devourer boss where everyone needs to stop).

You want to dump Glyph of Earthliving Weapon and Glyph of Riptide.
Glyph of Lesser Healing Wave
is a must-have, and
Glyph of Chain Heal
is often useful in the new 5mans.
Also, you're missing
Healing Focus
, which is easily worth much more than Elemental Weapons.

The last boss in FoS is a pretty tough one, so don't get down on yourself if you're having issues with him, especially when you're just starting off. I don't know what sort of UI you use, but I use VuhDo for healing frames and have the Mirrored Soul debuff in as a custom debuff (places an icon on whomever gets targeted) and I know to be ready to spam heal that person if DPS doesn't slow down.
The boss also does a powerful damage spell called Phantom Blast. I have a macro which Wind Shears my focused target (if it's alive and an enemy), and I make the boss my focus for this fight. Whenever I see him start casting, I use Wind Shear to try to interrupt it. Try to have DPSers and your tank help out with this, too - it'll really aid in preventing damage, so you'll need to heal less.
For some reason I can't bring up your spec, but others have commented on this. Oh, and just FYI - Glyph of Lightning Bolt is the single best glyph for Ele - drop Glyph of Lava ;-)

make the mistake of picking between HW and LHW and choosing to only use the one. LHW is a very powerful ability when spot-healing or when tank-healing (especially during spam heals or when glyphed), but I don't consider the glyph mandatory. HW is a slow cast, but with a Tidal Waves proc it isn't bad at all. HW is also great for pre-casting (e.g. on Malganis if you can time it right, nobody ever notices mind blast). Without Tidal Waves, LHW is weaker in terms of HPS and HPM, but it is still faster and therefore able to undercut other healers (or better yet - the bosses damage) and is easier to spread (e.g. you can heal 2 people with LHW in the time it takes to heal 1 with HW). With Tidal Waves, HW is more HPS while LHW is more HPM.
A decent shaman may try to pick one, but the good shamans know when to use one or the other.

I just macro both to my 5th mouse button: LHW with a click, HW with a shift+click, and alt+click is a cure.
Makes it easy to use both.
