Many people will tell you to go with the "energizer" spec until you're high enough level to train shadowform. That's good advice for someone who does a lot of quests and the occasional dungeon.
If you're leveling by running dungeons, you'd be wise to pick a spec that's capable of healing (basically every spec is capable of healing until about level 60) and queue yourself as a healer. You'll get groups fairly quickly that way and will give you ample practice for endgame. Whether you go holy or disc, be sure to at least pick up 3/3 Meditation from the disc tree.
Good endgame professions are inscription (for the shoulder enchants), tailoring (unbeatable cloak enchants) and enchanting (only ones able to enchant their rings). Tailoring/enchanting are a very good pairing because you can disnchant all the greens you make while leveling your tailoring, and have tons of mats to level your enchanting with.
As for race, it's all about personal preference in the end. I chose undead for the irony, but will of the forsaken is a nice fear-breaker (comes in handy in some raid fghts) and it turns out cannibalize is trivial because you're already a healer. It's nice if you're in shadowform for a free heal every couple minutes that won't switch you out of form.
The troll berserk can be nice but it has a short effect and long cooldown. Not sure if it stacks with power infusion - if it does that would be OP.
Blood elf would be nice for the mana surge racial, but also very situational. Plus they're kinda wimpy.

you already seem aware of the racial benefits, the question is: Which one will you remember or see yourself using on CD? human is easy, +rep and +spirit are nice benefits in end game and you never have to click on them for them to work.

Proffesions
for endgame, conclusion is that Tailoring + Engineering is the best choice. Both can be decent money at maxlvl, but in my opinion Alchemy is a good choice instead of tailoring if you enjoy a bit of pvp aswell, since loosing spell pen on cloak forces you to gem alot of it.
Shadow
or
Energizer
for lvling. Personally i always prefered shadow for lvling, it can be a bit though on mana at early lvls, but just drink alot or get heirlooms(or both) and you'll manage.
Racials:
Humans
are by far superior, with
PvPtrinket as racial
, this one is obviously awesome in pve aswell. They also have
10% more rep gain
,
3% more spirit
, and
better stealth detection
.
Trolls
in my personal opinion look awesome, and they have
20% haste on 3m CD
. they also have
slight hp regen
but thats not really so awesome.
Lower movement impairing
is always nice. There is also
5% dmg to beasts
but that will only be usefull when lvling.
Belfs
Not really a big fond of them myself, mostly due to looks. but they have some pretty neat racials, like
Silence, mana regen or both
depending on the situation you're in. and some
Magic resistance
.
UDs
Well they're undeads, alot of people like them. They have
the ability to remove fear sleep and charm.
They also have
shadow resistance
. And a few
Minor
Beneficial
abilities.
i did only list human as alliance since you obviously want horde, and if you decide to go alliance due to racials humans are by far superior.
also, i was very amazed that nobody spammed "read the stickies", hmm perhaps people just got to tired of writing it so they couldnt even be bothered posting and just went /sigh instead.(i was gonna write that, but i got caught in the moment)
