My wife and I leveled our first 70s as a druid / druid team. It worked well then, I imagine it still does. Perks include both being able to stealth and both having flight form (which lets one drop down to kite mobs in circles while the other picks herbs or mines ore, for example).

If you're leveling through questing, it doesn't much matter what you do it as. I duoed to 80 in a Balance/Ice Mage pair. We could kill pretty much anything before it even got to us. For 3/5-person quests, I would sometimes switch and focus on healing.
If she wants to be a Boomkin, then you could be pretty much anything else and be fine. Boomkin/Boomkin will have great ranged damage output (and manage to kill most stuff before it reaches you, since 4 starfires will tend to do that). Boomkin/Bear would work too, since you can keep stuff off her and probably do large groups using Swipe/Hurricane. Boomkin/Cat would have much of the same effect as Boomkin/Boomkin, especially once you can pounce. Boomkin/Tree probably would be much like boomkin/bear except you'd be healing her to keep her alive, rather than keeping aggro off her.

tank + healer would be the ideal combo
For questing the healer could get away with being a restokin to avoid boredom, for instances they'd be better off sticking to a proper resto spec.
A good
bear
and
tree
spec for lvl 34. Don't be afraid to each root a target when needed, great way to cut the enemy's numbers.

I thought tank / healer combo would result in too little damage and make the game a lot more tedious. Not true?
It really depends on how you plan to level.
Leveling through LFD tool and dungeons: Tank/Healer, because you'll find plenty of DPS to fill in the remaining spots.
Leveling through quests, etc.: You want at least one of you in a DPS spec or, as you suspect, it will take forever to level. (That said, for most of your leveling career and Tree/Bear combo can pretty easily swap to a Tree/Cat combo, just use a hybrid build.)

Ideal is to save gold for her to get dual spec and yourself going cat as primary and later on can take Cat/Bear combo for an ideal set-up depending on situation.
For non-raiding purposes there are completely viable Hybrid Feral builds that will let you do good damage and be a decent tank just by switching forms.

And a decently equipped boomer can heal any fiveman I've ever been in throughout Azeroth and Outlands. I still have flashbacks of healing a DK specced for blood DPS through one of the instances in Coilfang, but we did make it without wipes.
