2600 GS, What raids can I tank?

This is my Paladin:

And I'm currently looking for advice about what raids I can do with my current gear,
I have now OT'd Ulduar10m Hodir and Freya.
And MT'd OS+2(10m), Beasties and Jackass(10m) since It was the weekly raid this week :P, And EoE10m.
I need some advice if I could tank ToC25m yet, Since my guild is doing that now a lot.
Need suggestions which raids would be good to run over and over again to gear up.

You are obviously referring to the WoW Heroes GS, which is different than what most people quote. The GearScore addon scores are nearly twice as high for example I have a 2960 on WoW Heroes and a 5450 from the GearScore Addon, most people mean GearScore addon when they say GS.
Yes you could do ToC 25, though you might run the risk of dieing in 2 shots on Gormok if you get unlucky. I would say to follow Chevrest's advice on swapping gems & getting the Clutch. You may want to farm regular HoR for the
219 shield
as well. But if you have good healers and don't have terrible luck you should be good.

Whats with the influx of GS BS today? Who gives a flying rats ass about GS. Urg!
Interested in actual stats like health, avoidance and mitigation. GS tells none of that
especially for a tank.

With decent healers you could probably swing it, but It would be entirely up to how good your healers were. Your health is a little low for some of the nasty shots the bosses in ToC can deliver, but its more then manageable.
I do have to ask though, since I assume the shield is just a lack of decent drops, why you gemmed your chest the way you did... In doing so passing up on 24 stamina. The ten dodge is nice, but the health with carry you farther. swapping the one blue socket to the blue 30 stam gem would get you the +9 bonus. that extra stam cobined with kings/sanct would make for a nice boost in the Hp dept.
Also why wear the dps ring when
Clutch of fortification
is only 35 triumph badges. It would cover your gemming and give you a bunch more effective health.
Been getting the ring for a while now, will get it soon :)
And Yes, at first I stacked lot ot Avoidance, since Heroics would be done easier, but not it seems stacking Stamina is better :)

The meta isn't activated, you could swap out the dragons eye in the legs for a shifting dread stone then use the dragons eye elsewhere.
Sorry about that, I was playing around with the helm gem and forgot to change it back.

any suggestions about the new VoA boss? I tried to OT it but the boss seems to be kinda hard, even though it has low health, the abilites hit fcking hard >_<

Taunt trade more often? That might help. My guild gave him a couple tries last night after ToC25 and I found as far as healing goes the raid was a lot harder to deal with than the tanks. We only had problems with the tanks once the soft-enrage stacked too high, which is the DPS's problem. I really don't think it's the tanks who run that fight.

At how many stacks is it recommened to taunt aggro off the other tank?

We one shot the new VoA boss last night, it was a breeze. For tanking we traded on the 4th stack, If you are the only pally I would recommend frost aura over devotion since it'll help the entire raid much more. The key is to have enough competent ranged, have them burn down the orbs ASAP 10 man is a joke, and even 25 is easy.
I really don't think it's the tanks who run that fight.
I have to agree, this fight is all up to the DPS, esp ranged killing the right thing, tank job in this fight is easy, healers will be stressed by how well or poorly the DPS does their job.

My guild downed 10m last evening, I OT'd it(doesn't matter who is OT and who is MT but anyway :p). I had Devo aura because my GM is a Shammy healer(<3), so yh, he kept Frost Resist. Totem up.
The fight was pretty easy to tank, we switched(tanks) when we reached to 4 stacks and the effect wore off just when other tank had 4 stacks, easy and fun fight as tank ;)

4 is pretty much the magic number. That fight is too easy. When an add spawns and you don't have the boss taunt it. Its a dps race.
