Don't trust ensidia, run your own sims. If the difference is small enough, then use agi if you want.
Not that many movement intensive fights yet.

Being able to coordinate their members does not mean they know the best. Haste is better for Unholy because it helps the Ghoul as well as your character. It is better for Frost as well, unsure about Blood.

Based on Elitist Jerks, you're looking at (stat weights in agility/haste, based on 264 gear):
Blood - 1.37/1.5
Unholy - 1.48/2.01
So for both, 23 haste > 22 agi.

JC/BS combo is still better regardless, but Swordguard isn't bad by any means.
Tailoring offers nothing to a tank though.
The AP will give threat. But Blizzard didn't expect a tanking class to go tailoring I don't think ;).
