Avoidance is just too unreliable to be the main focus for gearing.
Allows you to fully negate a damaging attack.
Avoidance suffers from diminishing returns.
Can't avoid attacks from behind.
Cant avoid attacks while incapacitated.
Can't avoid magic attacks.
Can't avoid unavoidable attacks.
It's only a chance to do anything which is wasted stats every time you fail to avoid an attack.
Health is just so damn sexy.
Unlike avoidance health has no diminishing returns.
Stamina allows you to take more damage without dying.
Grants the healers and yourself more time to react equal to the time it would take to receive that extra damage.
Increases the effectiveness of percentage based abilities such as Ardent Defender, Improved Leader of the Pack heals, Glyph of Rune Tap heals...
With more health you have the capacity to soak more healing that would otherwise be overhealing thus increasing your healers' healing per mana.
If you aren't being attacked you aren't needing the health but if that's the case it's no more useless than any other defensive stat.

Even focusing primarily on stamina you're going to have quite a respectable avoidance that's easily knocking on DR's door which just solidifies EH's place at the top.

I don't stack stamina, but have been leaning more & more towards it as the content I run gets harder. I have always been die hard socket matcher trying to balance Stamina & Avoidance... but as I progress into ICC10 & start Pugging 25's I am coming more & more to the "I want more stamina" mindset.
Early one avoidance is fine, Dungeons / Heroics / Naxx , avoidance & block are useful, even up to ToC balancing stamina & avoidance is good. But once you pass ToC10 or the Lower Spire in ICC10 you will see that the EH from stamina is better. I am saddened to have to admit that...

Next one is Deathbringer, who's damage also (more or less) increases as he hits, through Blood Power. This means, that the less you are hit, the less marks you will get.
Although I originally thought this too, as it seemed the lesser geared tank in my raids appeared to be causing him to gain more BP, I believe that it's been confirmed on EJ that he does, in fact, still gain BP from misses, dodges etc. It's apparently per swing, not per hit.
Honestly, I really think that's the least of your worries on that fight. He gains far more BP from a tank failing to taunt at the right time and dps not kiting properly than from his melee swings on the tanks.
But once you pass ToC10 or the Lower Spire in ICC10 you will see that the EH from stamina is better. I am saddened to have to admit that...
There is still a ton of unavoidable damage in ToC...Gormock's bleed, Icehowl's FB, if the raid isn't doing something right and Jeraxxus' Felfire bolt hits you (HUGE damage), and theDoTs you get from Anub's adds or when you get frozen and take a large hit or two back to back. You might be doing ok with high avoidance for ToC simply because you out gear ToC at this point, so your health is naturally high, but I remember going into TotC and progressing through it and seeing that affective health was king then too.

My first time tanking it I was in almost all ilvl200 epics, and a couple 219 from ToC5. I quit WoW for awhile so I never did Ulduar. So I wouldn't say I was over geared, I honestly don't remember how much health I had, but yes if you get unlucky, or people aren't doing their job things can go bad.
I do remember when it was hard, and my biggest goal was to avoiding getting 3 shot once I could survive a 2 shot. That meant hitting 35k buffed HP or so & having as much avoidance as possible as there was no way with gemming for me to hit the 45k need to survive 3 hits.
