You've got the right idea. Moving is good. Situational awareness is better. Learning the fights so that you can see Hell coming your way is the best.
There are limited options to actually stop a wipe in progress with healing. If things go bad, the fact is that a raid boss can kill people faster than you can heal them. You prevent wipes by keeping the tank up, and he prevents wipes by holding aggro. DPS prevent wipes by dropping murder bombs before the enrage timer (you won't have to worry about that until you're level 80) goes off.

As a druid, you can't and shouldn't do much if people are being stupid. If they LoS, try to move in view of them. If they pull far too many for you to be able to heal (which ranges), catform/stealth/shadowmeld and rez afterward. If they run back toward you screaming "heal me", move further away from them.
My favorite times are when tanks start pulling when I am still a dash away looting. Catform and dashing just in time to pop an instacast HT to save the entire group is fun.
As a healer, it is your job to keep the tank alive (and dps/yourself), but use discernment when deciding who needs the heal and who needs to die. Hopefully only the tank has aggro, but many times that doesn't happen in groups...especially while lvling.

Healing is a lot like warfare. A famous general once commented that warfare is 99% boredom (getting ready for the fight) and 1% terror (once the fight begins, all plans are flushed down the crapper).
As you point out, sometimes things just happen. As a healer you need to learn the fights and gain the experience, so you can maximize chance in your favor once the brown fecal matter hits the ocscillating air movement device. But once it does, all you can do is your best and make that last ditch stand. And as Custer said at Little Big Horn, "I don't wanna be here today!"
This is true. Earlier today during a BRD run, the paladin tank pulled 2 groups of mobs on the Dark Iron Highway, then there were 2 patrols that came in. And there like 4-5 of the medics who kept healing themselves and the other mobs, so we were all just spamming out AoEs and using all our cooldowns, and the healer (shaman) was spamming healing wave at the pally (luckily he was the only one who was taking damage).
It was pretty hectic, but also kinda fun. However, while I find it fun I don't like it when it happens every pull. So yeah, you can plan all you want as a healer, but then there are times when it all goes to hell and things will get hectic.

Just keep moving around and stay within view of everyone..
I almost never stay in one spot! I like to know where everyone is at and what they are doing!
